	&lt;p&gt;Due to increasing popularity, the East of England Christmas Festival is being extended to three days this year - Friday 13th November, Saturday 14th November and Sunday 15th November 2009 - and will be under one roof, in the brand new exec Peterborough exhibition centre. &lt;/p&gt;
	&lt;p&gt;The Christmas Festival offers a unique shopping experience, with over 250 craft and gift stands. Visitors to the Festival will have the perfect opportunity to discover a whole host of quality gift ideas for friends and family, and the Food Hall will feature some of best local and regional specialty products. &lt;/p&gt;

	&lt;p&gt;Celebrity Chefs Nigel Brown and Richard Fox will be appearing over the three days of the show in our cookery theatre providing wonderful festive ideas for you to recreate at home for your family and friends. &lt;/p&gt;

Nigel Brown&lt;/p&gt;
	&lt;p&gt;Nigel regularly demonstrates his culinary talents at top food festivals and events, entertaining his audiences with his cheeky sense of humour and easy to follow teaching style. Nigel is actively involved in promoting the Love Food, Hate Waste Campaign, a subject he demonstrates passionately and which is very close to his Yorkshire roots.&lt;/p&gt;
	&lt;p&gt;When Nigel’s not demonstrating his skills on stage at many of the UK’s biggest food festivals, delivering private cookery courses at his Cookery Academy he caters for high profile private functions and VIP hospitality. He’s worked closely with Jean-Christophe Novelli at The Novelli Academy offering corporate entertainment and teaching specialist patisserie/cookery courses and is actively involved in promoting the Love Food, Hate Waste Campaign, a subject he demonstrates passionately and which is very close to his Yorkshire roots&lt;br&gt;

	&lt;p&gt;Saturday&lt;br&gt;
Richard Fox&lt;/p&gt;
	&lt;p&gt;Richard Fox is a TV chef, and active supporter, campaigner and demonstrator of the Defra backed Love Food Hate Waste campaign. He was winner of The British Guild of Beer Writers awards for Food and Beer writing; he has had his own cooking slot on BBC1 Regional Look North and was a regular chef on BBC 2's Food Poker. &lt;/p&gt;
	&lt;p&gt;His first book, The Food and Beer Cook Book was published by Senate in 2006, and was also launched in Australia by Marshal Cavendish. Richard co-wrote Morrissey's Perfect Pint with Neil Morrissey which was published by Harper Collins in September 2008. Channel 4 then commissioned a three part series based on the book, which aired in October last year.&lt;/p&gt;
	&lt;p&gt;His expertise in the world of beer have made him a favourite personality for hosting gourmet beer and food events for Harvey Nichols, Fullers brewery, as well as The British Ambassadors residence in Paris in support of British export. He has talked and demonstrated at The National Chef's Conference as well as numerous corporate and private events around the world. He has appeared on UKTV Food, Saturday Cooks on ITV, The Good Food Show on BBC Radio 4, to name but a few. &lt;/p&gt;
	&lt;p&gt;He is currently working on a new TV series with Neil Morrissey for ITV to be broadcast next year, as well as leading the way, through his new company, in promoting the message of reducing food waste demonstrating exciting recipes using left-over ingredients, and giving a host of tips on extending shelf life and reducing waste.&lt;/p&gt;
	&lt;p&gt;To make the day complete, visitors can enjoy a delicious meal in the festival carvery restaurant, knowing that all the food has been sourced under the Showground's Food Direct from the Farm scheme. &lt;/p&gt;

	&lt;p&gt;The 2009 Christmas Festival will be held over 3 DAYS this year, due to increasing popularity. These days are Friday 13th November, Saturday 14th November and Sunday 15th November 2009. &lt;/p&gt;

The Nigel Brown Cookery Academy only takes a maximum of 4 people on each course and dates are limited owing to Nigel's hectic schedule of demonstrating and filming so early booking is advisable.&lt;/p&gt;

A chance to pick up helpful hints and tips for hosting your own dinner party and impress your friends and family at home. There are demonstrations going on twice a day and Nigel is also available after the demonstrations to answer any questions you have. &lt;/p&gt;
	&lt;p&gt;Nigel, who runs his own cookery academy in North Lincolnshire,  is the resident celebrity chef on BBC Radio Humberside and demonstrates at many of the country’s top food shows and festivals alongside Jean-Christophe Novelli, Ainsley Harriott, Richard Fox and many more. Seating is limited so be sure to arrive early.&lt;br&gt;

	&lt;p&gt;Take part in these wine tasting sessions. An excellent opportunity and excuse (if you really need one!) to “try before you buy”. Come along and taste wines from all over the world and learn how to recognise a good wine to become a wine connoisseur – learn the skills so that you can impress your family and friends. Aimed at both beginners and experts; The beginners session is an opportunity to learn the basic and all are welcome. The advanced session is specifically aimed at those of you with a basic wine knowledge and will marry discerning tastes with exquisite wines. On occasions these sessions attract a small surcharge.&lt;/p&gt;
	&lt;p&gt;Beer Tasting&lt;/p&gt;
	&lt;p&gt;&lt;img src="http://www.uki.net/php/files/gmseventscms.uki.net/beer.jpg" alt="" title=""&gt;&lt;/p&gt;
	&lt;p&gt;Understand the gastronomic qualities of beer, how it's made, what affects the taste and which food it suits best. Men and women are both welcome, however, this session tends to be dominated by men! Why not use this as an opportunity to “leave the other half” shopping and come along and taste some of the Country’s finest real ales we have on offer. Naturally, you have the opportunity to try before you buy, and don’t worry about purchasing too much, we will help you carry it to your car. This session is free of charge and is open to any person over the age of 18 years.&lt;/p&gt;
	&lt;p&gt;Cognac Master Class&lt;/p&gt;

	&lt;p&gt;This area offers members of the public the chance to ask the questions that they have always been afraid to ask. Similar to the wine tasting, this section is broken down into two daily sessions. Beginner’s sessions are in the morning and an advanced session takes place in the afternoon. This area does attract a small surcharge and visitors are required to pre-register for the classes. This activity is amazingly informative and, if you have an interest in fine cognac, one definitely not to be missed.&lt;/p&gt;
	&lt;p&gt;Make 'n' Bake Area&lt;/p&gt;
	&lt;p&gt;&lt;img src="http://www.uki.net/php/files/gmseventscms.uki.net/m&amp;b%20boy.jpg" alt="" title=""&gt;&lt;/p&gt;
	&lt;p&gt;Make “N” Bake area - This popular attraction offers children the chance to make Jam tarts from scratch and then they can take them home and force feed them to the grandparents (finger nails and all !!!!!). Suitable for children of all ages, they will feel like a real Chef’. Aprons and Chef's hats are all provided, and after they have washed their hands the fun begins. This activity provides a great photo opportunity as the children very often end up covered in flour. This activity is free of charge and normally run two or three times per day. Sessions last approximately 40 minutes. Please note: children must not be left unsupervised without agreement of the area supervisor.&lt;/p&gt;

	&lt;p&gt;The Art, Craft &amp; Design Shows concentrate on providing all that is best in British art and design. The original Newmarket show has proved very popular with exhibitors and the public and are expanding what they do to provide new opportunities for exhibitors to reach the discerning public. &lt;/p&gt;
	&lt;p&gt;The Newmarket show will again be held at the superb Millennium Grandstand on the famous racecourse that provides excellent facilities including a very large car park on hard standing nearby.&lt;/p&gt;
	&lt;p&gt;All five floors of the magnificent Grandstand building will be utilised with catering on the top floors. There are four efficient lifts serving all floors as well as stairs and escalators.&lt;/p&gt;
	&lt;p&gt;The event will again be supported by the Cambridge Evening News group of newspapers as well as county and regional magazines. BBC Radio Cambridgeshire is again one of the media partners.&lt;/p&gt;

Caster Sugar&lt;br&gt;
Olive Oil&lt;/p&gt;

	&lt;p&gt;Thick bottomed non-stick frying pan&lt;br&gt;
Quality dessertspoon&lt;br&gt;
Stainless steel ladle&lt;br&gt;
Airtight container&lt;br&gt;
Silica gel bags (the ones you find in shoe boxes/handbags etc)&lt;/p&gt;
	&lt;p&gt;&lt;strong&gt;Method:&lt;/strong&gt;&lt;/p&gt;
	&lt;p&gt;Cover the base of your pan with a gentle sprinkling of the sugar until the surface is covered evenly. Place the pan over the heat and allow the sugar to dissolve from the outside in. Once the sugar starts to become a liquid, using your dessertspoon encourage the remaining granules to dissolve. When the sugar solution becomes a golden syrup colour remove from the heat (be very careful as this will be an extremely high temperature and very dangerous).&lt;br&gt;
Place a liberal amount of olive oil over the back of your ladle. When the sugar has become a state of liquid thread, using your spoon scoop some of the sugar up and weave backwards and forwards over and around your ladle to form a fine and intricate sugar basket. Gently remove your basket from the ladle and store in an airtight container with silica gel packs. &lt;/p&gt;
	&lt;p&gt;These will keep for up to 3-4 hours in airtight conditions. &lt;/p&gt;
	&lt;p&gt;&lt;strong&gt;Serving suggestion:&lt;/strong&gt;&lt;/p&gt;
	&lt;p&gt;Use baskets to enhance all your desserts.&lt;/p&gt;

	&lt;p&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;/p&gt;
	&lt;p&gt;&lt;strong&gt;For the shortbread:&lt;/strong&gt;&lt;br&gt;
175g     unsalted butter, softened&lt;br&gt;
75g       golden caster sugar&lt;br&gt;
175g     plain flour&lt;br&gt;
75g       rice flour or ground rice&lt;/p&gt;
	&lt;p&gt;&lt;strong&gt;For the filling:&lt;/strong&gt;425ml  double cream&lt;br&gt;
1         vanilla pod&lt;br&gt;
45g      icing sugar, sieved&lt;br&gt;
450g    fresh strawberries, washed&lt;br&gt;
To garnish:&lt;br&gt;
8 whole strawberries&lt;br&gt;
Sugar Baskets&lt;/p&gt;
	&lt;p&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br&gt;
1. Preheat the oven to 160C/325F/Gas3.&lt;/p&gt;
	&lt;p&gt;2. Place the butter into a large bowl and, using a wooden spoon, cream until softened. Add the sugar and blend together.&lt;/p&gt;
	&lt;p&gt;3. Sift both the plain flour and ground rice together into the creamed mixture.&lt;/p&gt;
	&lt;p&gt;4. Cut it in half and set one half aside. Using a rolling pin roll out the paste onto a large baking tray. Use a 20cm/8in plain flan ring as a guide around the ring.&lt;br&gt;
5. Remove the flan ring and decorate the shortcake mixture by crimping the mixture with your thumb and forefinger to form scalloped edges. Prick the surface of the shortcake with a fork. Repeat the process with the remaining shortcake mixture. &lt;/p&gt;
	&lt;p&gt;6. Place the shortcakes in the fridge and chill for 30-40 minutes until hard. Meanwhile, reserve eight whole strawberries. With the remaining strawberries remove the stalks (or hull) and cut in half. Set aside.&lt;/p&gt;
	&lt;p&gt;7. Remove the shortcakes from the fridge and bake for about 30 minutes until pale golden brown.&lt;/p&gt;
	&lt;p&gt;8.Prepare the vanilla cream filling: pour the cream into a large bowl. Split the vanilla pod with a knife lengthways, scrape out the seeds and add the seeds to the double cream with the icing sugar. Whisk until the cream forms soft peaks.&lt;/p&gt;
	&lt;p&gt;9. Allow the shortcakes to cool for 2 minutes. Carefully release from the baking sheet with a palette knife. Using a large knife mark into eight equal wedges. Allow to cool completely.&lt;/p&gt;
	&lt;p&gt;10.To assemble: place eight of the shortcake wedges onto a large plate. Lay the wedges closely together. Spoon over half of the whipped cream; pile the halved strawberries onto the cream. Spoon over the remaining cream and place the remaining eight shortcake wedges at an angle with the reserved whole strawberries underneath to keep each piece at an angle. Dust with icing sugar and serve with a sugar basket garnish.&lt;/p&gt;

	&lt;p&gt;Hull City Centre is set to host its third 3 day Global Food Fest from the 4th- 6th September 2009. With a main event stage, marquees and markets as well as a complete programme of entertainment, there really will be something for everyone.&lt;/p&gt;
	&lt;p&gt;There are some exciting changes to the festival site this year, which will include:&lt;/p&gt;
	&lt;p&gt;Family and Education Marquee&lt;br&gt;
Food Innovation Marquee&lt;br&gt;
Regional Food Village &lt;/p&gt;
	&lt;p&gt;Our celebrity chef this year is Antony Worrall Thompson who will be taking to the main stage on the Saturday of the festival, creating mouth-watering dishes and sharing his years of experience and knowledge of food.&lt;/p&gt;
	&lt;p&gt;Antony is one of the UK’s top celebrity chefs and is following in the footsteps of previous Hull Global Food Festival celebrities James Martin and Ainsley Harriott.&lt;/p&gt;
	&lt;p&gt;Once again, top chef Nigel Brown will be appearing at the festival, this will be the third year running Nigel has tempted the tastebuds of the people in Hull so be sure to catch one of his entertaining demonstrations. Yorkshire born Nigel runs his own cookery academy in North Lincolnshire and actively promotes the local sea fishing industry in partnership with the Yorkshire and Humber Seafood Group.&lt;/p&gt;
	&lt;p&gt;Last year’s event proved to be huge success once again with around 67,000 extra visitors flocking to the centre of Hull to grab a taste of the action. This year’s line-up of chefs, exhibitors, demonstrators and stall holders promises to be just as impressive, showcasing the best in local produce and global cuisine.&lt;/p&gt;
	&lt;p&gt;If all this were not exciting enough, there is an exciting twist to the 2009 event…&lt;/p&gt;
	&lt;p&gt;We are linking up with the Round the World Clipper Yacht Race, to mark the prestigious launch, which is being hosted by Hull this year. 	&lt;p class="center"&gt;&lt;strong&gt;Chicken, Ham &amp; Asparagus Roularde&lt;/strong&gt;&lt;/p&gt;
	&lt;p&gt;Ingredients:&lt;/p&gt;
	&lt;p&gt;1½ Chicken Breasts&lt;br&gt;
1 slice plain Cooked Ham&lt;br&gt;
1 Asparagus Spear&lt;br&gt;
Salt and Pepper&lt;br&gt;
Fresh Spinach Leaves&lt;br&gt;
Basil or Tarragon &lt;/p&gt;
	&lt;p&gt;Method:&lt;/p&gt;
	&lt;p&gt;Using 1 whole chicken breast, cover with clingfilm or a freezer bag and flatten with a meat mallet. Remove the clingfilm and place the sliced ham over the surface of the raw chicken and season with the salt and pepper.&lt;/p&gt;
	&lt;p&gt;Remove the stalks from the spinach and cover the ham with the leaves.&lt;br&gt;
Using the remaining half chicken portion, remove any sinew and place in a food processor along with either basil or tarragon and season and blend to a puree.&lt;/p&gt;
	&lt;p&gt;Spread the chicken and herb puree over the spinach leaves and place your raw asparagus spear in the centre.&lt;/p&gt;
	&lt;p&gt;Roll the filled chicken breast like a swiss roll keeping the asparagus in the centre.&lt;/p&gt;
	&lt;p&gt;Wrap in clingfilm and foil to retain a cannon/cylindrical shape and poach in simmering water for approximately 20 minutes.&lt;/p&gt;
	&lt;p&gt;Remove from pan, allow to cool then refrigerate for 2 hours whilst still wrapped up. &lt;/p&gt;
	&lt;p&gt;Serving suggestion:&lt;br&gt;
Slice and serve cold with Lime and Chilli Dressing&lt;/p&gt;

	&lt;p&gt;Seafest is an annual festival which takes place at West Pier and around the harbour area of this premier seaside resort and fishing port in North Yorkshire.&lt;/p&gt;
	&lt;p&gt;We celebrate the regions connection to fishing and are proud of our Yorkshire Coast maritime heritage.&lt;/p&gt;
	&lt;p&gt;Each year we host the regions biggest gathering of folk singers, shantymen and musicians at this unique event.&lt;/p&gt;
	&lt;p&gt;We are dedicated to promoting local musicians alongside those with more international acclaim. So far our programme has included the cream of the folk song , maritime and shanty world in the United Kingdom. We have also enjoyed music from other nations including Senegal, Sicily, Canada, Eire, Luxembourg, Germany, Holland, Britanny and the USA.&lt;/p&gt;

	&lt;p&gt;The festival is based around Scarboroughs West Pier and North Wharf where you will find a maritime themed exhibition, The Cropton Brewery Real Ale Bar and Childrens Entertainment and our festival main stage.&lt;/p&gt;
	&lt;p&gt;In addition there is our well known ‘Sea Fish Cookery’ marquee where visiting chefs demonstrate the art of sea - food preparation.&lt;/p&gt;
	&lt;p&gt;The sound of shanties and folk music can also be heard in the unique atmosphere of Scarboroughs Ale Houses. In 2008 they include The Merchant, The Leeds Arms and The Leeds Hotel. Other activities can be found in our alcohol free/acoustic venue The Sea Cadets Hall.&lt;/p&gt;
	&lt;p&gt;At the adjacent berths expect to find visiting vessels. &lt;/p&gt;
	&lt;p&gt;General admission is free .&lt;/p&gt;

	&lt;p&gt;The East of England Show, organised by the East of England Agricultural Society, is the region’s leading farming and countryside show. The Show features some of the best of British livestock as horses from Shetlands to Shires.&lt;/p&gt;
	&lt;p&gt;There is something for all the family to enjoy, including displays of country sports, crafts and activities. There are also displays of farming nostalgia with working steam and vintage farm machinery displays.&lt;/p&gt;
	&lt;p&gt;There will be plenty of activities for children and lots of opportunities to find out more about food and farming.&lt;/p&gt;
	&lt;p&gt;The Show will also feature a huge range of trade stands, plus crafts and a food hall with plenty of mouth watering temptations.&lt;/p&gt;

	&lt;p&gt;Last weekend saw top chef Nigel Brown launch his brand new cookery demonstration of how to prepare and serve 10 dinner party guests a three course meal for less than £20 including a bottle of wine.&lt;/p&gt;
	&lt;p&gt;In just 40 minutes ten lucky audience members were treated to a starter, main course, dessert and a glass of wine all for the princely sum of £17.61&lt;/p&gt;

	&lt;p&gt;Shugborough Festival of Food also saw Nigel team up with fellow celebrity chef Richard Fox to promote the Love Food, Hate Waste campaign which promotes reducing the amount of food waste in the home by showing quick, innovative ways to use items which are usually thrown away. Needless to say, with two chefs in the kitchen there was a lot of banter as they cooked up some tempting ideas from some leftover tuna, yesterdays’ uneaten baked potato and a tin of chickpeas!&lt;/p&gt;

	&lt;p&gt;Tricia was the lucky winner of a competition run by MyDish and invited her sister Sue to enjoy a morning making their own pasta which they then used to make cannelloni stuffed with chicken, cottage cheese and spinach baked under a fresh tomato and pesto sauce topped with parmesan.&lt;/p&gt;

Flavours Magazine&lt;/p&gt;
	&lt;p&gt;After an easy drive from Southwell to Goxhill in&lt;br&gt;
North Lincolnshire,  I arrived at  The Nigel&lt;br&gt;
Brown Cooking Academy to begin my course entitled&lt;br&gt;
'Meat, Poultry and Game Galore'. Nigel's wife&lt;br&gt;
Lisa greeted me as I pulled up in front of their&lt;br&gt;
lovely home, and guided me through to the&lt;br&gt;
kitchen, where I was introduced to Nigel, and&lt;br&gt;
given a welcome drink of  warm winter berry&lt;br&gt;
mulled wine and a plate of perfect homemade&lt;br&gt;
florentines. As Nigel and I began to chat, Lisa&lt;br&gt;
made the first of many pots of coffee, so I knew&lt;br&gt;
that I would be in for a great day with lots of&lt;br&gt;
fresh coffee to help me along.&lt;/p&gt;
	&lt;p&gt;&lt;a href="http://www.nigelbrownchef.co.uk" title="Nigel Brown"&gt;&lt;img src="http://data5.blog.de/media/161/3024161_de396ac3e6_m.jpg" alt="Nigel Brown" vspace="5" hspace="5"&gt;&lt;/a&gt;&lt;/p&gt;
	&lt;p&gt;Nigel runs private cookery courses for&lt;br&gt;
individuals and small groups of up to 4 people&lt;br&gt;
at his home, but will host larger groups at other&lt;br&gt;
locations. Nigel feels that it is good to give&lt;br&gt;
lessons in a domestic kitchen, rather than a&lt;br&gt;
large industrial restaurant kitchen, as it&lt;br&gt;
demonstrates to his clients that they can achieve&lt;br&gt;
the same results at home without the aid of&lt;br&gt;
expensive equipment.&lt;/p&gt;
	&lt;p&gt;Nigel told me that they had received a late&lt;br&gt;
cancellation due to a  family bereavement from&lt;br&gt;
the other guests, and that I would be having his&lt;br&gt;
attention exclusively. This made for a very&lt;br&gt;
relaxing day for both of us, as we were able to&lt;br&gt;
chat about various aspects of the food chain,&lt;br&gt;
from growing and sourcing quality raw&lt;br&gt;
ingredients, through storage,    preparation and&lt;br&gt;
cooking, to finally savouring the delicious&lt;br&gt;
results.&lt;/p&gt;
	&lt;p&gt;We soon began to prepare the first dish of the&lt;br&gt;
day; a Game Terrine made with venison, rabbit,&lt;br&gt;
pheasant, bacon and sausage meat blended with&lt;br&gt;
sage and juniper berries. Nigel brought out the&lt;br&gt;
meat we would be using, and we discussed the&lt;br&gt;
merits of having a good, local butcher who takes&lt;br&gt;
great care in sourcing the very best meat and&lt;br&gt;
game.&lt;/p&gt;
	&lt;p&gt;Nigel explained that we would line the dish with&lt;br&gt;
the bacon, then layer the strips of meat and&lt;br&gt;
sausage meat until we had filled the dish. He&lt;br&gt;
suggested that we add other ingredients, and gave&lt;br&gt;
me the choice of pistachio nuts, fresh&lt;br&gt;
cranberries, toasted pine kernals, quail's eggs,&lt;br&gt;
sundried tomatoes and soaked apricots. It was fun&lt;br&gt;
to experiment with the different flavours and&lt;br&gt;
customise the dish to my own taste. Nigel&lt;br&gt;
recommended that the terrine be served with a&lt;br&gt;
Cranberry Cumberland Sauce, and quickly&lt;br&gt;
demonstrated how quick and easy it is to make&lt;br&gt;
this wonderful accompaniment.&lt;/p&gt;
	&lt;p&gt;After a quick coffee, and some more florentines,&lt;br&gt;
we moved on to the next dish, Chicken, Ham and&lt;br&gt;
Asparagus Roulade.&lt;/p&gt;
	&lt;p&gt;We cheerfully set to, bashing the chicken breasts&lt;br&gt;
to flatten them, and covered the raw chicken with&lt;br&gt;
slices of ham. After seasoning, we added a layer&lt;br&gt;
of fresh spinach, then blended another piece of&lt;br&gt;
chicken with basil and seasoning. The resulting&lt;br&gt;
puree was carefully  spread over the leaves, and&lt;br&gt;
a piece of raw asparagus  was placed at the&lt;br&gt;
centre. This was then rolled tightly into a&lt;br&gt;
cylindrical shape, wrapped in cling film and&lt;br&gt;
poached in simmering water.&lt;/p&gt;
	&lt;p&gt;Next, we prepared  Anna Potatoes - an easy dish&lt;br&gt;
made up of layers of thinly sliced potatoes and&lt;br&gt;
onions, layered together with clarified butter&lt;br&gt;
and seasoning. Easy to prepare and cook in&lt;br&gt;
advance, it slowly bakes in the oven, and is a&lt;br&gt;
prefect dish for a dinner party.&lt;/p&gt;
	&lt;p&gt;Nigel then took me out into the garden, and we&lt;br&gt;
looked at the various home grown vegetables,&lt;br&gt;
fruit and herbs which are thriving in a small&lt;br&gt;
greenhouse and vegetable patch. The rest of the&lt;br&gt;
garden was beautiful, and perfect for summer&lt;br&gt;
entertaining - Nigel even runs  outdoor cooking&lt;br&gt;
courses  when the weather is fine.&lt;/p&gt;
	&lt;p&gt;Back into the warm kitchen, it was time for&lt;br&gt;
lunch, so I took the opportunity to have a break&lt;br&gt;
and chat to Nigel while he cooked a wonderful&lt;br&gt;
meal of Fillet Steak with a Blue Cheese Crust,&lt;br&gt;
accompanied by finely chopped baby courgettes,&lt;br&gt;
broad beans and asparagus tips, which Nigel&lt;br&gt;
quickly sautéed in rape seed oil.&lt;/p&gt;
	&lt;p&gt;Nigel was born in Bridlington, into a family who&lt;br&gt;
have spent a lifetime in the Hotel and Catering&lt;br&gt;
industry.  He spent much of his teenage years&lt;br&gt;
helping in  their family restaurant, and his&lt;br&gt;
formal catering training started when at 16 he&lt;br&gt;
spent 2 years at Hull College, 2 at Scarborough&lt;br&gt;
and a year each at Grimsby and Beverley College.&lt;br&gt;
Nigel told me of his great admiration for Ken&lt;br&gt;
Allison, former Senior Lecturer at Scarborough&lt;br&gt;
Technical College who had a profound influence on&lt;br&gt;
Nigel's style of cooking. James Martin whom Nigel&lt;br&gt;
occasionally works alongside, was also a former&lt;br&gt;
student of Ken Allison's.&lt;/p&gt;
	&lt;p&gt;During his years working at some of London's&lt;br&gt;
biggest and busiest hotels Nigel enjoyed&lt;br&gt;
competing in many national competitions. He won a&lt;br&gt;
place in the Trusthouse Forte Chef of the Year&lt;br&gt;
competition and entered the London Hotelympia&lt;br&gt;
Salon Culinaire competitions on several occasions&lt;br&gt;
where he thoroughly enjoyed the atmosphere and&lt;br&gt;
camaraderie amongst his fellow competitors. He&lt;br&gt;
became a qualified teacher at the age of 21. In&lt;br&gt;
his more advanced training, Nigel spent time at&lt;br&gt;
the highly acclaimed French cookery school Ecole&lt;br&gt;
Le Notre where he picked up a wealth of&lt;br&gt;
experience and knowledge in areas of specialist&lt;br&gt;
patisserie work.&lt;/p&gt;
	&lt;p&gt;In 2007 Nigel and Lisa launched Superchef Secrets&lt;br&gt;
Ltd and produced their first set of 3 cookery&lt;br&gt;
school DVD's. These were aimed at teaching&lt;br&gt;
children and young adults and students  how to&lt;br&gt;
produce nutritious food, bearing in mind the&lt;br&gt;
budget, and adhering to food hygiene practices. A&lt;br&gt;
sophisticated dinner party for adults was also&lt;br&gt;
demonstrated; an easy to follow guide, from&lt;br&gt;
initially  writing a shopping list,  through to&lt;br&gt;
presenting guests with a  stunning 3-course&lt;br&gt;
dinner.&lt;/p&gt;
	&lt;p&gt;The DVD's were an instant success, and due to an&lt;br&gt;
ever increasing demand for real hands on cookery&lt;br&gt;
courses, Nigel decided to open a Cookery Academy&lt;br&gt;
at his home  in Lincolnshire&lt;/p&gt;
	&lt;p&gt;Nigel particularly enjoys demonstrating his&lt;br&gt;
skills on stage at many of the UK's biggest food&lt;br&gt;
festivals, and welcomes the opportunity to meet&lt;br&gt;
people from all over the country to  discuss his&lt;br&gt;
recipes and cooking styles. He is the resident&lt;br&gt;
celebrity chef for BBC Radio Humberside, and has&lt;br&gt;
recently done a screen test for Ready Steady Cook.&lt;/p&gt;
	&lt;p&gt;Nigel also works closely with Jean-Christophe&lt;br&gt;
Novelli at The Novelli Academy offering corporate&lt;br&gt;
entertainment and teaching specialist&lt;br&gt;
patisserie/cookery courses, and is currently in&lt;br&gt;
discussions with Highgrove House regarding  their&lt;br&gt;
organic food programme.&lt;/p&gt;
	&lt;p&gt;Whether Nigel is  filming, writing, demonstrating&lt;br&gt;
at food festivals, catering for high profile&lt;br&gt;
private functions and VIP hospitality he so&lt;br&gt;
obviously loves the world of catering, and is&lt;br&gt;
passionate about spreading the word about  good&lt;br&gt;
quality, healthy food.&lt;/p&gt;
	&lt;p&gt;I was telling Nigel how much I enjoy canapés, so&lt;br&gt;
we spent the afternoon experimenting with some&lt;br&gt;
delicious combinations: simple basil leaves with&lt;br&gt;
balsamic vinegar, and baked  brioche with a&lt;br&gt;
spinach and goat's cheese filling, finished off&lt;br&gt;
with a thin layer of fois gras. When the dishes&lt;br&gt;
of the morning were cooked, we tasted the Game&lt;br&gt;
Terrine with  Cranberry Cumberland Sauce, and the&lt;br&gt;
Chicken, Ham and  Asparagus Roulade with Lime and&lt;br&gt;
Chilli Dressing, two more ideas to add to my&lt;br&gt;
party canapé repertoire. We also had fun with&lt;br&gt;
some napkin folding, and Nigel kindly made no&lt;br&gt;
comment as my gondola turned out to look more&lt;br&gt;
like a shipwreck!&lt;/p&gt;
	&lt;p&gt;This wonderful day was too quickly coming to an&lt;br&gt;
end. I thoroughly enjoyed the easy company of&lt;br&gt;
Nigel and Lisa, and so appreciated that Nigel was&lt;br&gt;
flexible enough to tailor the course to my own&lt;br&gt;

	&lt;p&gt;Under Nigel’s expert guidance you’ll start with the basics of knife control with various cuts of fruit and vegetables for cooking and garnishing before moving on to the more challenging techniques of boning and filleting. &lt;/p&gt;
	&lt;p&gt;Throughout the day you’ll be preparing dishes such as Chicken Americaine, Paupiettes of Trout and Sole with an accompanying sauce and a Classic Beef Stroganoff. You will be provided with suitable containers to take your work home to cook and share with your family or friends.&lt;/p&gt;
